ANCESTRAL CRAFT

Distillation of De ELLA Mezcal begins in the high mountain soil by hand harvesting the matured agave hearts. With leaves (pincas) removed, the hearts (piñas) of the mother plant are split by axe and precisely layered over a large oak wood fire. The subterranean, natural stone pit is sealed entirely with hot volcanic rocks, slowly roasting the agaves underground for seven days.

Once caramelized, the cooked hearts are carefully removed by hand and manually crushed under a one-ton tahona stone wheel. The process is intensive yet majestic. The smell of earth, flowers and natural caramelized sugar fill the air. The crushed fibers are gently married with fresh mountain well water in open-air, pine wood barrels. Left untouched for 10 days, a natural fermentation occurs and slowly converts the agave sugar into aromatic and sweet droplets.

The last step consists of heating the small handcrafted copper stills through a gentle wood fire made of pine trees. The fermented alcohol is slowly distilled twice for two days and two nights becoming our mystic De ELLA Mezcal.

Honoring the natural taste of each agave and the ancestral craftsmanship of true mezcal, De ELLA is entirely handcrafted by our Zapotecan family in the pueblo of San Dionisio Ocotepec, Oaxaca, Mexico.
